Main Dish
‘Loomiscious’ Eggplant

INGREDIENTS
2 medium eggplants
8 oz ricotta cheese
16 oz mozzarella cheese
¼ C parmesan cheese
1 qt spaghetti sauce
3 eggs
3 red peppers
8 oz Italian sausage
10 oz breadcrumbs
oil
spring form pan or casserole dish
PREPARATION
1. Beat eggs in bowl and set aside.
2. Place bread crumbs on plate and set aside.
3. Roast red peppers. Remove skin and set aside
4. Peel eggplant and slice into ¼ - ½ inch rounds.
5. Dip sliced eggplant in egg, then bread crumbs. Set
aside.
6. Fry and crumble Italian sausage and set aside.
7. Shed or grate mozzarella and set aside.
8. Fry sliced eggplant in oil until golden brown. Set
aside.
ASSEMBLY
1. Spoon some spaghetti sauce on bottom of casserole
dish or
spring form pan.
2. Place 4-5 slices of eggplant on sauce. Follow with
ricotta
cheese and sauce.
3. Place 4-5 slices of eggplant. Follow with sauce,
mozzarella
and sausage.
4. Place 4-5 slices of eggplant. Follow with sauce and
mozzarella.
5. Place 4-5 slices of eggplant. Follow with sauce,
mozzarella and
roasted peppers.
6. Place 4-5 slides of eggplant. Follow with sauce and
mozzarella.
7. Top with parmesan cheese.
BAKING INSTRUCTIONS
1. Bake in preheated 350 oven for about 1 hour or until
cheese is
bubbly.
2. Let cool for 15 minutes.
3. Slice and enjoy!
